Coffee that doesn't need cream and sugar
Cream and sugar are what people add to coffee that has stopped tasting like coffee. Fix the age and most of the bitterness leaves with it.
Coffee that drinks well black has three things going for it. It was roasted recently. It was ground close to brewing. And it was not roasted to death to hide the first two. Roast level is the smallest of the three. Most people reach for cream and sugar because the bag on their counter is months old, and no roast level fixes that.
Why grocery coffee needs cream and sugar
Roasted coffee starts losing aroma within days and is noticeably flat after a month. The oils go stale, the sweetness drops out, and what is left is the bitter, papery base note. Cream covers the bitterness. Sugar puts the sweetness back. Neither is a flavour choice. Both are a repair.
Most supermarket bags carry a best-by date set twelve months after roasting, and no roast date at all. By the time a bag is on the shelf it is often three to nine months old. It was drinkable black once. Not by the time you bought it.
One of our customers put it better than we can: "There is no bitter taste that some stronger roasts have. I don't usually drink it black but I did."
Which roast to start with
Medium. It has the most sweetness to work with and the least of the char that people read as "strong". Ours tastes of chocolate, cedar and brown sugar and it is the one we hand to anyone who says they have never liked coffee black.
Dark if you want more body and less acidity. It still should not taste burnt. If it does, the coffee is old, not dark.
Light if you want the origin loud. It is the least forgiving of the three if your water is too hot.

Three checks before you buy
- The bag has a roast date, not a best-by date. If there is no date, that is the answer.
- Whole bean, ground at home. If you must buy ground, buy it the week it was roasted and finish it within three weeks.
- Drink it between day 5 and day 21 after the roast date. Before day 5 it is still off-gassing. After day 21 it starts to flatten.

Questions
Is dark roast more bitter than medium?
Not by itself. Bitterness comes from over-roasting, from age, and from brewing too hot or too long. A dark roast that was roasted three weeks ago and brewed at 94°C will taste smoother than a medium roast that is six months old.
Does fresh coffee need less sugar?
Usually yes. Fresh coffee keeps the sugars that develop in roasting; stale coffee loses them, so people add sugar back. Try a fresh bag black for one week before deciding.
What is the smoothest coffee to drink black?
A recently roasted medium roast, whole bean, ground just before brewing. Origin and roaster matter less than the date on the bag.
